This radish and carrot pickle is the key to that famous banh mi sandwich found everywhere in Vietnam. It's their version of bread and butter pickles, though crispier, not as sweet, and with a slight radish taste from the daikon. We love to add this to summer spring rolls with a protein of choice and serve it with Vietnamese peanut butter sauce.
