Based on the proven recipe from Thai Noodle & Laksa Class, we incorporate Japanese stock making techniques to add more body and ‘umami’ while still keeping the stock light and lively. Cook noodles, Thai dumplingsand/or your choice of protein and veggies, then customise to your taste.
Add coconut milk or unsweetened evaporated milk to make it creamy and mild
Season with fish sauce and add a bit of sugar to round off the sharpness of the fish sauce
Add a squeeze of fresh lime and coriander to give it an exotic touch
Add a couple of thinly sliced bird eye chillies to ramp up the heat
