Simply rehydrate in hot water until soft and flexible (takes 5-10 min) then add to the pot or pan. The fettuccine-like structure is best for absorbing flavours quickly while staying al dente. In a large pot of boiling water, cook noodles for 2 min. Drain and rinse immediately with cold water. While in a colander, fluff frequently to keep them loose and avoid tangling. Now they’re ready to drop into a hot soup just before serving, toss into a stir-fry, or as a light base for a fresh green and herb salad.
