Shortcut to Tom Yam Goong and anything Thai

Calling all prawn lovers! A secret helper for everybody’s favourite Thai menu in no time: tom yum, Thai hot pot and laksa! Based on the proven recipe from Thai Noodle & Laksa Class, we incorporate Japanese stock making techniques to add more body and ‘umami’ while still keeping the stock light and lively. Cook noodles, Thai dumplings and/or your choice of protein and veggies, then customise to your taste.

    Rany’s tips:

    1. Add coconut milk or unsweetened evaporated milk to make it creamy and mild
    2. Season with fish sauce and add a bit of sugar to round off the sharpness of the fish sauce
    3. Add a squeeze of fresh lime and coriander to give it an exotic touch
    4. Add a couple of thinly sliced bird eye chillies to ramp up the heat
