    Small but mighty for lifetime use

    Anyone who tried to grate ginger, garlic or turmeric on a box grater or Microplane will know something else is needed for grating coarse, fibrous ingredients. This tool, oroshigane, does that single job exceptionally well. Manufactured by Tsuboe, an artisanal maker of metal graters and blades since 1907, it is a sheer joy to cook with.

    Rany’s Tip: Squeeze the ginger paste to extract the juice. Freshly squeezed ginger juice is divine in drinks, marinades and dressings. You will be surprised how much juice comes out from 1cm of ginger root.
